French Oven Beef Stew

Ingredients

  • 2 pounds beef stew meat cut in 1 1/2 inch cubes
  • 2 medium onions cut in eights
  • 3 ribs celery cut in diagonal pieces
  • 4 medium carrots cut in half crosswise and lengthwise
  • 1 11-ounce can tomato juice
  • 1/2 cup quick cooking tapioca
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon basil
  • 2 medium potatoes cut in slices 1/4 inch thick

Instructions

  • Combine beef, onion, celery, and carrots.
  • Combine tomato juice, tapioca, sugar, salt, pepper, and basil and pour over meat and vegetables. Stir.
  • Cover and cook in 300° oven for 2 1/2 hours
  • Mix potatoes into stew and cook one hour longer
