Preheat oven to 350°.
Line a baking tray with parchment paper or a silicon mat. Arrange wonton wrappers on the tray and spray lightly with cooking spray. Bake 6-8 minutes until browned, bubbly, and crispy. Remove from oven and set aside.
Brown beef in a skillet over medium-high heat in the sesame oil, adding salt and pepper to season. After the meat is browned, add soy sauce and reduce to further flavor the meat.
Place half the wonton chips on a platter, top with half the beef, then add the remaining chips. Sprinkle with scallions and drizzle on hoisin sauce, spicy mayo, and sriracha.
