
My family has been making this recipe for years. I believe it was originally written for you to seal each salmon fillet in a foil packet with some mushrooms and seasoning, and then pop them on the grill. We worked out that you could just as easily cook it in the oven in a 9×13 pan, however, and that became our preferred methodology.
This pairs really well with a nice pile of white, fluffy rice!
Salmon and Mushrooms
Ingredients
- 4 salmon steaks or fillets
- 4 tablespoons butter or margarine
- 1/8 teaspoon dried rosemary crumbled
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons dry vermouth or dry white wine
- 8 ounces sliced mushrooms
- 2 tablespoons green onions sliced
Instructions
- Grease a 9×12 pan
- Arrange salmon in pan with one tablespoon of butter on each fillet
- Pour mushrooms and green onions on top, then pour wine on top
- Sprinkle with rosemary, salt, and pepper
- Seal with foil tightly
- Bake at 450° for 1/2 hour
