Oatmeal Chocolate Chip Cookies

Believe me, once you sample these delightful little wafers of happiness, you’ll never go back to the recipe on the Nestle bag again.

Now, if you’re looking at the title and thinking, “I don’t really care for oatmeal cookies,” look again, because these won’t have anywhere near the same texture that most oatmeal cookies do. We’re grinding the oats into an oat flour first, so there are no big pieces of grain sticking out.

The paradox of these cookies is that the batter is super thick. I tried to make this without an electric mixer and it can technically be done, but it is a workout. But once it’s baked, the oat flour takes on a nutty flavor that is really delicious, and jealously holds onto moisture while it’s baking. The result is a super soft, tender cookie that I absolutely love!

Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 1/2 cups oatmeal
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 12-ounce bag semi-sweet chocolate chips
  • 1 1/2 cups chopped nuts optional

Instructions

  • Blend oatmeal to powder
  • Cream together butter, sugar, and brown sugar
  • Add eggs and vanilla
  • In a separate bowl, combine flour, oatmeal, salt, baking powder, and baking soda
  • Mix all ingredients together and add chocolate chips and nuts
  • Place golf ball sized cookies 2″ apart on ungreased cookie sheet
  • Bake at 350° for 10 minutes
