Asian Fusion Nachos

Sometimes, a recipe is made with a grand idea in mind. And sometimes, it is absolutely not. This is definitely a recipe of the second variety, where I had something I had to use (leftover wanton wrappers) and no clear idea of what I intended to do with them. There were instructions on the back of the package for how to make them into wanton chips and the idea was born.

I had leftover scallions from the dish I’d made with the wantons, although I never have trouble finding a use for those in my kitchen. And I pretty much always have hoisin, sriracha, and spicy mayo on hand because of the flavor boost they add to a lot of dishes. They’re vastly underrated ingredients that you should definitely check out if you haven’t. I don’t even make a turkey sandwich anymore without a drizzle of spicy mayo in it, in fact.

Ingredients

  • 20 wonton wrappers cut in half diagonally
  • cooking spray
  • 1 tablespoon toasted sesame oil
  • 1 pound ground beef
  • salt and pepper
  • 1 tablespoon soy sauce
  • 2 scallions sliced thin
  • hoisin sauce for serving
  • spicy mayonnaise for serving
  • sriracha for serving

Instructions

  • Preheat oven to 350°.
  • Line a baking tray with parchment paper or a silicon mat. Arrange wonton wrappers on the tray and spray lightly with cooking spray. Bake 6-8 minutes until browned, bubbly, and crispy. Remove from oven and set aside.
  • Brown beef in a skillet over medium-high heat in the sesame oil, adding salt and pepper to season. After the meat is browned, add soy sauce and reduce to further flavor the meat.
  • Place half the wonton chips on a platter, top with half the beef, then add the remaining chips. Sprinkle with scallions and drizzle on hoisin sauce, spicy mayo, and sriracha.
